Let’s start you off with beautiful pasta dish which. a favourite of ours.
Velvety pasta with tomatoes
1 small onion, diced
1 grated clove of garlic
600g pasta (Preferably gluten-free)
400g canned tomatoes
1 egg (yolk only)
3 tablespoons of Olive Oil
2 tablespoons of mayonnaise
Salt and pepper
Gently fry your onions and garlic in one tablespoon of Olive oil in a small pan until they are soft and translucent
Boil your pasta in a bigger pan, before draining and rinsing. Leave it on low heat before adding the remaining Olive oil.
Whisk the mayonnaise and the egg yolk before adding it to the pasta. Leave to simmer for 2 mins before adding the fried onions and garlic.
Combine the tomatoes and required salt and pepper. Stir and leave to simmer on low heat until you have a lovely velvety sauce.
Plate and garnish with basil leaves and flaked peppers.

Fruity Sausage with butternut squash
5 chicken sausages
1 butternut squash
1 tablespoon of Olive Oil
1 tablespoon of ground allspice
Salt and pepper
Slice your butternut squash, apple (core it first) and onion into wedges.
Preheat your oven to 180° C before spreading the butternut squash, onion, and apple into one layer across a baking tray. Sprinkle the lot with olive oil, allspice, salt, and pepper. Leave to roast for 15 minutes.
Meanwhile, slice your sausages in two long halves. Add the sausages to the baking tray for another 15 minutes until they are roasted.
Plate and serve hot and sizzling!
